Fabio Vair grew up in the workshop of his family's historic gelateria, where he worked throughout his education. After earning a master's degree in Food Science and Technology, he spent three years as a technical manager in the research and development lab of a major Italian craft brewery. He then returned home to Gelateria Pasticceria Penna, which he runs together with his sister Chiara and his mother Celestina.

In recent years, the family business has evolved, transforming from a renowned gelateria into an innovative pastry shop where customers can find a vast assortment of confectionery products suitable for all seasons and all ages. Thanks to continuous investments in training, equipment, and machinery, Penna is able to produce a significant portion of the semi-finished ingredients used in its preparations, ensuring a high and constantly improving quality standard.

For the past three years, Fabio has been working as a demonstrator and, more recently, as a product formulator for a company specializing in ingredients and semi-finished products for gelato and pastry.
